Ingredients
- 1 lb. 90% lean ground beef
- 1- 1/2 t. kosher salt
- 1/2 c. diced onion
- 1/2 c. diced celery
- 1/2 c. diced carrot
- 28 oz. can diced tomatoes
- 32 oz. beef stock
- 2 bay leaves
- 4 oz. small pasta like Acini di Pepe
- grated Parmesan cheese, optional
Steps
- Stove top:
- In a large pot, saute beef and salt on high heat until browned, breaking the meat up into small pieces. Add onion, celery and carrots; saute 3 - 4 minutes. Add tomatoes, stock and bay leaf; cover; cook on low until beef and vegetables are tender, about 1 - 1 1/2 hours ( add more broth or water if it evaporates too much).
- Add the pasta; stir; cook according to package directions.
