This is an incredibly easy meal to make, so it is the perfect meatless dish to make on a busy weeknight. It is a complete meal on its own but you can add some chicken if you would like. Serve it with a side salad and a crusty bread.
1 lb. penne pasta
1 T. olive oil
8 oz. sliced mushrooms
2 cloves garlic, crushed
1½ c. marinara sauce
¼ t- ½ t. crushed red pepper flakes
4 Roma tomatoes, diced
3 c. fresh spinach leaves
½ c. heavy cream
salt and pepper, to taste
½ c. shredded Parmesan cheese
Cook pasta according to package directions, about 10-13 minutes; drain.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat; add mushrooms; saute 3 minutes, until mushrooms are tender; add in garlic; heat 1 minute. Stir in cooked pasta, marinara sauce and red pepper flakes. Pour in tomatoes; add spinach.; stir to combine; stir in heavy cream.
Serve hot sprinkled with Parmesan cheese.
