This New England classic side dish is a sweet and tangy treat. It goes well with any meal, but is especially delicious with pork, like pork chops, pork roast, ham, bratwurst or smoked sausages. Think of it like a fancier version of apple sauce.
48 oz. Great Northern Beans, drained
4 T. butter
2 large Granny Smith or any type of cooking apples, cubed (3 c.)
1/2 c. brown sugar
1/4 c. white sugar
1/2 c. ketchup
1 t. cinnamon
1 T. molasses
1 t. salt
Preheat oven to 400 degrees.
In a large skillet, melt butter; add cubed apples; cook until tender. Add both sugars; stir and cook until sugars are melted. Stir in ketchup, cinnamon, molasses and salt; add beans; mix well. Pour mixture into a 2 quart casserole.
Bake for about 1 hour.
6 - 8 servings.
