If you have leftover fresh cranberries, use them to make an amazingly delicious and gorgeous cranberry salsa appetizer. It will definitely be a huge hit at any party.
12 oz. fresh cranberries
¼ c. sliced green onions
2 jalapeños, minced
¼ c. fresh cilantro leaves, minced
2 T. finely grated fresh ginger
2 T. freshly squeezed lemon juice
½ c. sugar
crackers or tortilla chips, for serving
Optional: a brick of cream cheese, for serving
Rinse, drain and pick over cranberries, discarding any that are soft or bruised. Place cranberries in a food processor or blender; pulse until finely chopped, but not mushy.
Place crushed cranberries in a bowl; mix together with green onions, jalapeños, cilantro leaves, and ginger; pour in lemon juice and sugar; stir together. Cover with plastic wrap.
Refrigerate, allowing flavors to develop. It starts out a bit tart, but as it is allowed to sit it will develop even more flavor.
Serve as a plain salsa, or over cream cheese with crackers like Wheat Thins, Ritz or tortilla chips.
