Homemade cookies are always better and these homemade nutter butters are no exception. There are only 3 ingredients in the cookies and 4 ingredients in the filling. You can make them round if you wish, but making them into the classic nutter butter shape
Cookies:
1 c. sugar
1 c. peanut butter
1 egg
Filling:
¼ c. butter, room temperature
¼ c. peanut butter, room temperature
1 c. powdered sugar
1-2 T. milk
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Stir cookie ingredients together until smooth. Scoop out cookie dough into 1 inch balls; place onto a prepared baking sheet. Press down with the back of a fork; press again from the opposite direction, making the criss-cross pattern on top of each cookie.
To make the cookie dough into the famous shape of a Nutter Butter cookie, form the cookie dough ball into a log shape. Roll the cookie dough in sugar, if desired.
Press down with the back of a fork and then press again from the opposite direction, to make the criss-cross pattern on top of each cookie. Finish by pinching in both sides of each cookie before baking.
Bake for 12 minutes. Let cool on the sheet for 1-2 more minutes.
Filling: Use a hand mixer to beat the butter and peanut butter in a big bowl until smooth; slowly add in powdered sugar; beat until smooth. Add the milk, 1 tablespoon at a time, until the desired consistency is reached.
Spread 1 T. of the filling onto the bottom side of one of the cookies; top with another cookie to create a cookie sandwich.
Makes 6 sandwich cookies.
