These wonderful cookies are great to serve or gift for the holidays. They start with a dark chocolate fudge cake mix and are stuffed with bits of York Peppermint Patties.
16.5 oz. package Duncan Hines dark chocolate fudge cake mix
1 large egg
4 oz. cream cheese, softened
1/4 c. butter softened (almost melted)
16 snack size York Peppermint Patties
sprinkles, optional
Preheat oven to 350 degrees. Lightly grease a cookie sheet.
In a small bowl, mix the cake mix, egg, cream cheese and butter until well combined. It will be very thick.
Make 16 balls out of the chocolate batter.
Flatten each ball in the palm of your hand. Place a peppermint patty on each flattened ball; wrap the cookie dough around the peppermint patty so it's covered completely. Repeat with the remaining peppermint patties and dough.
Place the cookies on prepared cookie sheet. Sprinkle with colored sprinkles, if desired.
Bake for 10-11 minutes.
Remove cookies from oven; allow cookies to cool for 4-5 minutes on the cookie sheet; transfer cookies to a wire rack to cool completely.
Store in an airtight container.
Makes 16 cookies.
