Frozen Hot Chocolate Cheesecake

Description

Use those hot chocolate packets that are sitting in your pantry to make a decadent chocolate cheesecake. The hardest part in making this dessert is waiting for it to freeze!

Ingredients

Crust:
24 Oreo cookies
6 T.. melted butter
1/4 c. sugar

Cheesecake:
2 blocks cream cheese, softened
1/2 c. powdered sugar
1/4 c. chocolate sauce
2-3 hot cocoa packs
pinch of salt
2 c. heavy cream
1 c. mini marshmallows

Crust:
In a food processor, pulse cookies until fine crumbs; transfer crumbs to a bowl; add butter and sugar; stir until combined. The texture should be similar to wet sand.

Grease/butter a 9 inch pie plate; press in the crust mixture.

In a large bowl using a hand mixer, beat cream cheese until light and fluffy; add powdered sugar, chocolate sauce, cocoa packets and salt; mix until smooth. Add half of the heavy cream; beat until smooth. Add the remaining heavy cream; beat until very fluffy. Fold in mini marshmallows.

Pour cheesecake mixture into prepared crust. Freeze until solid, about 4 hours.

Serve.

Makes 8-10 servings.
