Artichoke is really good on its own, but serving it in wonton cups makes it fancier and more festive. You may want to double the recipe for a large crowd.
1 c. grated Parmesan cheese
1 c. mayonnaise
1/2 t. onion powder
1/2 t. garlic powder
8 oz. shredded mozzarella cheese
14 oz. can water-packed artichoke hearts, drained and chopped
12 oz. package wonton wrappers
cooking spray
Preheat oven to 350 degrees.
In a small mixing bowl, combine Parmesan cheese, mayonnaise, onion and garlic powders; mix well; stir in mozzarella cheese and artichokes; set aside.
Coat 1 side of each wonton wrapper with cooking spray; press greased side down into mini- muffin cups.
Bake 5 minutes or until edges are lightly browned.
Fill each cup with 1 T. artichoke mixture.
Bake 5-6 minutes longer or until golden brown.
Serve warm.
Makes about 48 cups - 16 servings.
