Beefy Tomato Soup

Description

It's that time of year when soup is the perfect satisfying and comforting meal for your whole family. This one is tasty, quick and easy to prepare. Serve it with a crusty bread and a side salad, if desired.

Ingredients

¾ lb. ground beef
2 T. olive oil
1 onion, chopped
3 garlic cloves, minced
2 t. salt
¼ t. ground black pepper
1 t. oregano
23.5 oz. jar of Francesco Rinaldi Traditional No -Salt Added pasta sauce or your favorite
4 c. chicken stock
½ c. cream cheese, at room temperature
1½ c. elbow macaroni or short-tubed pasta
¼ c. freshly chopped basil, divided

In a large pot, heat olive oil over medium heat. Add onion and garlic; cook 3-4 minutes, stirring until the onion softens. Add ground beef, breaking up with a spatula; cook until no longer pink. Add salt, pepper and oregano; stir to combine. Pour in chicken stock and pasta sauce, scraping the bottom of the pot while stirring. Bring soup to a simmer; cook for 10 minutes.

Whisk in the cream cheese until mixed in; add ½ of the fresh basil. Pour in the pasta; stir; cover; cook for 10 minutes.

Serve garnished with the remaining basil.

6 servings.

*The pasta soaks up all the broth when reheated for leftovers. If you don't want this to happen and want more broth in the leftovers, cook the pasta separately when initially preparing and then add it to each bowl when reheating.
