9 inch pie crust, already baked and cooled
Peanut Butter Crumbles:
1/2 c. powdered sugar
1/4 c. creamy peanut butter
Peanut Butter Filling:
1 small box instant vanilla pudding mix
1 1/2 c. milk
1/2 c. peanut butter
1 c. whipped cream or 1 c. Cool Whip
Whipped Topping On Top of Pie:
2 c. whipped cream or 8 oz. Cool Whip, for topping
Peanut Butter Crumbles:
In a medium bowl, use an electric mixer on medium speed to mix powdered sugar and peanut butter until small peanut butter crumbles start to come together. If mixture is too powdery, add a few drops of water and larger nuggets will form.
Add half of the peanut butter nuggets to the bottom of the pie shell.
Peanut Butter Filling:
Using a mixer, mix the dry vanilla instant pudding mix, milk and peanut butter together for 2 minutes; add in the already whipped cream; mix in lightly.
Pour pudding into the pie crust on top of the peanut butter crumbles.
Whipped Cream Topping and Crumbles:
Top with whipped cream; add half of the remaining peanut butter crumbles to the top whipped cream.
Allow pie to cool in the refrigerator for at least 1-2 hours to set up before cutting.
8 servings.
*If desired, make the pie more peanut buttery by adding a couple of tablespoons of peanut butter or by adding a 1/2 more cup of whipped cream to the peanut butter pie filling.
