Roasted Parmesan Garlic Zucchini Spears

Description

Serve these yummy zucchini spears as an appetizer or as a side dish. They are easy to make and so delicious, they won't last long.

Ingredients

3 medium sized zucchini (about 1½ lb.)
1 T. olive oil
1 T. freshly squeezed lemon juice
2 t. grated/zested lemon peel
1 garlic clove, minced
½ t. oregano
2 T. grated Parmesan cheese
1 T. shredded Parmesan cheese
salt and pepper, to taste

Preheat oven to 350 degrees. Line a baking sheet with aluminum foil; spray with cooking spray.

Cut zucchini lengthwise into quarters, then cut in half widthwise.

Lay the zucchini spears on the prepared baking sheet; sprinkle with salt and pepper.

In a small bowl, whisk together olive oil, lemon juice and peel, garlic and oregano; drizzle over zucchini spears. Sprinkle with Parmesan cheeses.

Bake for 15 minutes or until lightly golden brown. For more of a crisp edge, broil for the last 3 minutes.

Serve immediately.

4-6 servings.
