Description
No more boring meatloaf! This one is over the top with gooey melted cheese and minced jalapenos with a yummy glaze on top and finally garnished with more jalapenos.
Ingredients
- 2 lb. ground beef (85/15)
- 1 c. plain or Italian style breadcrumbs
- 1 T. Italian seasoning
- 1 t. salt
- ½ t. black pepper
- ½ c. milk
- 1 large egg
- 2 T. Worcestershire sauce
- 1 - 2 jalapenos, minced
- 8 oz. Cheddar cheese brick
- Glaze:
- 1 c. ketchup
- ¼ c. brown sugar, tightly packed
- 1 T. Worcestershire sauce
- 1 T. red wine vinegar
- 2 cloves garlic, crushed
- ⅛ t. salt
- pinch cayenne pepper
- 1 jalapeno, sliced
Steps
- Preheat oven to 350 degrees. Lightly grease a 9 x 13 pan with non-stick cooking spray.
- In a large mixing bowl, combine ground beef, breadcrumbs, Italian seasoning, salt, pepper, milk, egg, Worcestershire sauce and minced jalapeno; knead until combined.
- Divide meat in half; shape one half of the meat for the bottom half of the loaf; place in prepared pan. Place Cheddar cheese brick in the center; shape remaining half of meat as the top half of the loaf; seal the edges.
