These mashed potatoes are even better than grandma's recipe. They have a few ingredients that make them so much better- cream cheese and garlic powder!
3 lb. Yukon Gold potatoes, peeled and diced
1-2 T. chicken stock base
¾ c. half and half
½ c. whole milk
¼ c. butter
4 oz. cream cheese
½ t. garlic powder
Place potatoes in a pot; cover with well salted water about 1-2 inches above the potatoes; add chicken stock base; stir.
Bring to a boil; reduce to a simmer; simmer until cooked through and you can pierce them easily with a knife.
Cook time depends on the size of chunks.
When potatoes are done, using a colander; transfer to a large bowl. Add half and half, milk, butter, cream cheese and garlic powder. Mash until thoroughly combined and smooth.
Season to taste with salt and pepper.
Serve.
8 servings.
*Potatoes need a LOT of salt to be flavorful, so don't be afraid to add it, just keep adding until the potatoes have good flavor. Without enough salt, you can't taste the other flavors in the dish.
