Ingredients

• non-stick cooking spray
• 1 lb. Jennie-O andouille sausage, sliced (turkey kielbasa)
• 1/2 yellow onion, diced
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 2 celery ribs, diced
• 3 t. Cajun seasoning
• 1 c. instant rice
• 1 c. chicken broth/stock

Steps

1. Preheat oven or grill to 400 degrees.
2. Combine all ingredients in a large bowl; mix well.
3. Lay out 5 square aluminum foil pieces; spray centers with non-stick cooking spray; equally divide the mixture among the 5 pieces of foil. Fold up 2 sides of the foil; fold over; fold up both ends in to make a sealed packet.
