What an incredibly easy way to make breakfast. Simply put ham slices in the bottom of muffin cups, sprinkle on some cheese, crack and egg on top and bake. Voila! Breakfast is ready!
Ingredients
- non-stick cooking spray
- 12 ham slices
- 1 c. shredded Cheddar cheese
- 12 large eggs
- kosher salt
- freshly ground black pepper
- chopped fresh parsley, for garnish
Steps
- Preheat oven to 400 degrees. Spray a 12-cup muffin tin with non-stick cooking spray.
- Line each cup with a slice of ham; sprinkle with Cheddar cheese; crack an egg in each ham cup; season with salt and pepper, to taste
- Bake until eggs are cooked through, 12 - 15 minutes, depending on how runny you want the yolks.
