Ingredients
- Chicken:
- 1 1/2 t. vegetable oil
- 4 bone-in skin-on chicken thighs (leave at room temperature for 30 minutes before cooking)
- 1/2 t. Kosher salt
- 1 t. freshly ground black pepper
- Pan Sauce:
- 1 T. unsalted butter
- 1 T. olive oil
- 12 oz. sliced mushrooms
- 1 large shallot, minced
- 2 cloves garlic, minced
- 1 c. dry white wine
- 1 1/4 c. low-sodium chicken, divided
- 1 T. fresh thyme leaves
- 2 t. Dijon mustard
- 1 T. all-purpose flour, mixed with 1/4 c. chicken broth
- 1 T. heavy cream, optional
- salt and pepper, to taste
Steps
- Chicken Thighs:
- Preheat oven to 400 degrees.
- Dry chicken with paper towels; season both sides with Kosher salt and freshly ground black pepper.
