Ingredients
- 3 slices bacon
- 1 lb. boneless skinless chicken breasts cut into tenders
- 1 T. bacon drippings
- 1 T. butter, if needed
- salt
- black pepper
- garlic powder
- Sauce:
- 1 T. butter
- 6-8 oz. mushrooms
- 1/2 c. chicken broth/stock
- 1/2 c. heavy whipping cream
- 1/2 freshly, finely grated Parmesan cheese
- chopped parsley or green onions, for garnish
- salt and pepper, to taste
Steps
- Heat a large skillet over medium-high heat; add 3 bacon slices; fry until crisp; transfer bacon to a paper towel lined plate; crumble; set aside.
- There should be about 1 T. bacon drippings remaining in the skillet. If there isn’t, add 1 T. butter to the skillet before adding chicken.
- Season chicken with salt, black pepper and garlic powder, to taste. Place chicken breast tenders in the skillet; cook about 4 minutes per side, until juices run clear and the chicken is cooked through. Remove chicken from the skillet; set aside.
