Description
These little meatloaf rings are really tasty and easy to make. They definitely aren't your mother's meatloaf.
Ingredients
- 3 bell peppers, any color
- 1 lb. lean ground beef
- 1/4 c. breadcrumbs
- 1 egg, lightly beaten
- 1 t. Worcestershire sauce
- 1/2 onion, finely chopped
- 1/2 t. fresh thyme leaves, chopped
- 1 clove garlic, minced
- 1 T. tomato paste
- kosher salt
- freshly ground black pepper
- 1/4 c. ketchup
- 1 T. brown sugar
- 2 c. shredded Monterey Jack cheese
- 1 T. fresh parsley, for garnish
Steps
- Preheat oven to 350 degrees. Line a medium baking sheet with parchment paper.
- Cut ends off of peppers; set aside. Remove/discard seeds; slice peppers into 2 inch thick rings. Place on prepared baking sheet.
- In a large bowl, combine ground beef with breadcrumbs, beaten egg, Worcestershire sauce, onion, thyme, garlic and tomato paste; season with salt and pepper; stir until combined. Fill each pepper ring with meatloaf mixture.
