Description

This low carb meal with lots of vegetables and lean protein has the flavors of your favorite Philly Cheesesteak sandwich without all of the bread. It makes a delicious and healthy dinner. To make things easy and even faster at dinnertime, prep the veggie

Ingredients

  • 2 T. olive oil, divided
  • 8 green peppers, cut into halves
  • 1 sirloin steak
  • 1 1/2 c. sliced mushrooms
  • 1/2 red pepper, sliced
  • 1 small red onion, sliced
  • 2 c. mozzarella cheese, grated
  • salt and pepper, to taste

Steps

  1. Preheat oven to 400 degrees. Cover a 9x13 inch baking dish with aluminum foil.
  2. Wash peppers; cut into halves; de-seed. Drizzle pepper halves with 1 T. olive oil; season with salt and pepper.
  3. Bake in prepared dish for 10 minutes.
