Spicy Caramelized Cauliflower

Description

You will never know how good cauliflower can actually be until you make this spicy caramelized cauliflower. It's the perfect veggie to roast and holds up well in the oven. Serve it as an appetizer or as a side dish.

1 head cauliflower, broken into bite sized florets
1/2 c. Sweet And Spicy Barbecue Sauce, divided

Place an oven rack near the top of the oven, probably on the second one from the top and another rack in the middle position of the oven; then preheat the oven to 450 degrees. Cover a large baking sheet with aluminum foil.

Place the cauliflower pieces on prepared baking sheet sheet; drizzle with 1/4 c. BBQ sauce; toss to thoroughly coat all pieces.

Roast on the middle oven rack for 12 minutes, until almost fork tender.

Remove from oven; increase temperature to broil.

Using a pastry brush, generously brush each piece with remaining sauce. Place the cauliflower back in the oven on the upper rack; broil for 2 minutes, until sauce has caramelized on the cauliflower.

Serve.

5-6 small or 1-2 large servings.
