Put your old green bean recipe aside and try this tasty version instead. It's easy and quick to make these wonderfully fresh green beans. They make a perfect side dish for special occasions.
1 lb. green beans, cleaned and trimmed
2 T. butter
2 cloves garlic, minced
½ lemon, juiced
1 T. freshly grated Parmesan cheese
1 t. lemon zest
pinch of red pepper flakes, optional
salt and pepper, to taste
Fill a large bowl with ice cubes and cold water; set aside.
Bring a large pot of water to a boil; add green beans; cook for about 3 minutes until crisp-tender. Drain beans; immediately place in ice water to stop the cooking.
Melt butter in a large skillet over medium-high heat; add garlic; cook for about 1 minute until fragrant. Stir in lemon juice; cook for 1 minute. Drain green beans; add to skillet. Saute green beans, stirring occasionally for about 3-4 minutes, until heated through.
Remove from heat; stir in Parmesan cheese and lemon zest.
Season with salt and pepper, to taste; add a pinch of red pepper flakes, if desired.
