In about 45 minutes, you can have your whole meal ready to serve to your family. It's hearty and satisfying with ground beef, cheddar cheese, vegetables and rice. Serve with a side salad, if desired.
8 oz. sour cream
1 c. shredded cheddar cheese
1 t. garlic powder
1 lb. ground beef
14.5 oz. can chopped tomatoes, undrained
1/2 bag frozen vegetable mix, cooked
1 t. salt
1 c. UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1 t. black pepper
Preheat oven to 350 degrees.
Cook rice according to package instructions, about 20 minutes.
While rice is cooking, brown ground beef in a large non-stick skillet; season with garlic powder, salt and pepper, to taste; discard any grease. Add vegetables, tomatoes and sour cream to ground beef; cook until just heated through.
Combine with cooked rice; mix thoroughly. Transfer to a casserole dish; top with cheese.
Bake until warmed through and cheese melts, about 20 minutes.
Serve hot.
