Ingredients
- 6-8 chicken thighs, bone-in or boneless
- 1 1/2 c. long grain rice
- 1 1/2 c. chicken stock
- 1 1/4 c. water
- 1/2 c. peanuts
- 1/2 c. Hoisin sauce
- pinch of salt
- 1 1/2 T. rice wine vinegar
Steps
- Preheat oven to 350 degrees with baking pan/dish in the oven.
- Once warmed, remove baking pan/dish from oven; add rice, chicken stock and 1 1/4 c. water; cover with aluminum foil; place in oven for 25 minutes.
