Gin and Tonic Refrigerator Pickles

Description

These refreshing and delicious homemade pickles will be great served along with hamburgers, hot dogs, or your favorite sandwich and your favorite chips.

Ingredients

5-7 small Persian or pickling cucumbers
1 T. juniper berries (in the spice aisle of large supermarkets or order from Amazon)
3/4 c. gin
3/4 c. tonic water
freshly squeezed juice of 1 lime
2 T. Rose's lime juice

Wash and trim the stem tips from the cucumbers; slice in half lengthwise; slice in half again; trim to the length of the jar. The spears need to fit in the jar and eventually be completely submerged in liquid when finished.

Mix together the gin, tonic water, freshly squeezed lime juice and the Rose's.

Lightly crush the juniper berries to release their flavor.

Fit the pickle spears into a clean glass jar. Fill the jar, but don't pack them in tightly.
Add the juniper berries; add the liquid mixture; top off with more tonic water if the spears aren't completely submerged.

Place the cap on the jar tightly; refrigerate. Let the pickles 'pickle' for 2 days before serving.

The pickles will keep for at least 1 month in the refrigerator.
