1 3/4 c. light brown sugar
1 c. butter, melted
1 egg
1 egg yolk
1 T. vanilla
2 c. all-purpose flour
1 c. old-fashioned rolled oats
1/2 t. baking soda
1/2 t. kosher salt
2 c. semi-sweet chocolate chips
Maldon flaked sea salt or coarse sea salt*

Place sugar in a large mixing bowl; add hot melted butter; beat until smooth; let cool for a few minutes before adding eggs and vanilla; beating one more time.

Whisk together dry ingredients; slowly add to wet ingredients; stir to combine. Add chocolate chips; stir well to make sure chips are evenly distributed. Refrigerate dough for at least 1 hour, or until thoroughly chilled.

When ready to bake, preheat oven to 325 degrees. Line a baking/cookie sheet with parchment paper.

Scoop dough into golf ball sized balls; place on prepared baking/cookie sheet, placing just 3 cookies on the baking sheet.

Bake 16 minutes. Remove from oven; immediately sprinkle with Maldon sea salt. Let cool 1-2 minutes on baking/cookie sheet; remove to a wire rack.

Makes 14 large 5 inch cookies.

Tips:
The size of the cookies will determine their texture. If wanting a giant bakery-style cookie with crisp edges and a chewy center, follow the recipe exactly and make the cookies huge. (Just 3 to a baking sheet!) There is no way to get that perfect texture without the giant cookie.

If making the cookies smaller, they will be really good, but the giant ones are so much better.

*The finishing salt is really important. There aren't a lot of fancy spices and ingredients, but Maldon flaked sea salt is a key ingredient in these cookies. It can be found in some grocery stores, but the best prices by far are on Amazon. However, if you don't want to buy a fancy salt, coarse sea salt or even kosher salt will work. Just be extra careful when sprinkling the salt on the cookies, as the smaller grains of salt can quickly make them "salty" instead of giving just a hint of salt with the sweet cookie. Last but not least, don't let the oatmeal in this recipe deter you from trying them because there is barely a hint of oatmeal flavor, but it provides a chewy texture that can't be beaten.
