Description

If you are a soup lover, you need to make this delicious soup. It's tomato soup with ground beef, onion, cream cheese, spaghetti sauce, canned tomatoes and whole wheat macaroni. It's all cooked in one pot and can be ready in a little over 30 minutes.

Ingredients

• 1 lb. lean ground beef
• 1 onion, diced
• 3 t. minced garlic
• 2 t. salt
• 1/4 t. black pepper
• 1 t. oregano
• 4 c. chicken stock
• 26 oz. spaghetti sauce
• 14.5 oz. diced tomatoes, drained
• 4 oz. package cream cheese, at room temperature
• 1/4 c. freshly chopped basil, divided
• 1 1/2 c. whole wheat elbow macaroni

Steps

1. In a large skillet or dutch oven over medium heat, add ground beef and onion; cook until beef is no longer pink. Add in garlic; cook for 1 minute. Add salt, pepper and oregano; stir to combine. Pour in chicken stock, spaghetti sauce and diced tomatoes; bring to a simmer; cook for 10 minutes.
2. Whisk in cream cheese until it's completely mixed; add half of the basil. Pour in pasta; stir; cover; let cook 10 minutes, or until the pasta is tender.
3. Serve, garnished with the remaining basil.
