Remember when grandma used to make potato salad? Well, this might be the very same or nearly the same fantastic recipe that she used. Warmer weather calls for cookouts, BBQ's and family gatherings. Why not make a potato salad like grandma used to make.
2 lb. potatoes from about 6 medium, cut into bite-size chunks (peeled)
1 to 1/2 c. mayonnaise
1 T. white vinegar
1 T. yellow mustard
1 t. salt
1/4 t. black pepper
1 c. from about 2 medium stalks celery, chopped
1/2 c. from about 1 medium onion, chopped
4 hard-boiled eggs, chopped
paprika, to taste
Place potatoes in a large pot; cover with well salted water; bring water to a boil; cook about 10 minutes or until tender; drain.
Mix mayonnaise, vinegar, mustard, salt and pepper in a large bowl. Add potatoes, celery and onion; toss gently. Stir in eggs. Cover. Refrigerate at least 4 hours.
Serve, sprinkled with paprika.
8 servings.
*Be sure to keep it chilled since it has mayonnaise in it.
