Chocolate Gooey Butter Cake

Description

This cake is so darn good, it will remind you of those wonderful cakes that grandma used to make. Everyone will enjoy its thin, flaky chocolate top layer sitting on top of a gooey, molten cocoa layer. Serve it with a scoop of vanilla ice cream, if desired

Ingredients

2 sticks butter, melted separately, divided
1 pkg. chocolate cake mix
3 eggs, divided (1 egg for bottom cake layer and 2 eggs for the filling layer)
8 oz. package cream cheese, softened at room temperature
1/4 c. cocoa powder
16 oz. powdered sugar
1 t. vanilla extract

Preheat oven to 350 degrees.

Prepare a 9 inch round, 3 inch deep cake pan or a 9x13 baking dish.* (A bundt works well too.)

Combine cake mix, 1 egg and 1 stick melted butter; stir until well blended. Pat the mixture into the prepared pan; set aside.

In a stand mixer on medium speed or using a hand-held mixer, beat the cream cheese until smooth; add in the remaining 2 eggs and cocoa powder.

Lower the mixer speed; add the powdered sugar; slowly add the remaining 1 stick of melted butter; add vanilla; beat the mixture until smooth.

Pour filling over the cake mixture in the pan.

Bake 40 - 50 minutes, checking at 30 minutes with the 9x13 pan. DO NOT overcook the cake- the center should still be a little gooey when finished baking.

Let cake partially cool on a wire rack before cutting into pieces.

*Be sure to prepare the pan correctly. If possible, use GOOP -Homemade Baker’s Spray, as it’s far superior to any product at the store. If you can't use GOOP, grease the pan and then line it with parchment paper.

Room temperature ingredients are a good idea. Place butter and cream cheese out a few hours before making this amazing cake.
