Ingredients

  • 2 - 15 oz. cans chickpeas, rinsed and drained
  • 6 large hard boiled eggs, sliced crosswise
  • kosher salt, to taste
  • black pepper, to taste
  • 2 T. chopped red onion
  • 2 T. extra virgin olive oil
  • 2 T. apple cider vinegar
  • 1 T. freshly chopped parsley

Steps

  1. Toss all ingredients into a medium bowl.
  2. Serve.
  3. *Salad can be stored covered in the refrigerator up to 1 week.
