Description
Make a quick and easy to make, affordable lunch for the whole week with this salad. It's really healthy and has lots of fiber and protein. Each 1 cup serving is only 2 freestyle points or 375 calories.
Ingredients
- 2 - 15 oz. cans chickpeas, rinsed and drained
- 6 large hard boiled eggs, sliced crosswise
- kosher salt, to taste
- black pepper, to taste
- 2 T. chopped red onion
- 2 T. extra virgin olive oil
- 2 T. apple cider vinegar
- 1 T. freshly chopped parsley
Steps
- Toss all ingredients into a medium bowl.
- Serve.
- *Salad can be stored covered in the refrigerator up to 1 week.
