Don't say that you don't like Brussels Sprouts until you have tried this recipe. The sprouts get irresistibly caramelized and crispy, the bacon adds a salty flavor and the apples provide a subtle sweetness. It all goes together to make a side dish that is
Ingredients
- 3 bacon slices, cut into 1 inch pieces
- 6 c. medium size Brussels sprouts, ends trimmed off and then halved
- 1 medium Fuji or Golden Delicious apple, cut into 1/4 inch slices and then halved
- kosher or sea salt, to taste
- freshly ground black pepper, to taste
- 1-2 t. red wine vinegar
Steps
- Preheat oven to 425 degrees. Line a large baking sheet with aluminum foil or a silpat mat.
- Arrange bacon in a single layer on the prepared baking sheet. Bake for about 10 minutes, until cooked through, but not yet crispy.
- Remove bacon pieces from the baking sheet; set aside. Place the Brussels sprouts on the baking sheet; toss in the bacon drippings, making sure that they're well coasted; season well with salt and pepper. Roast until they begin to brown, about 15 minutes.
