Make a side dish that your family will ask for over and over again. It's really delicious and fairly easy to make. It would make a great addition to a fun gathering or party.
1 head of cauliflower
olive or avocado oil
Pink Himalayan salt or your preference
black pepper, if desired
3 T. butter
parsley, chopped
Preheat oven to 400 degrees.
Trim off the bottom of the cauliflower; remove all of the leaves and the hard stem, but don't break apart the cauliflower. Give it a quick rinse; pat dry.
Drizzle oil generously on top to make it a perfectly roasted cauliflower head.
Add salt and pepper. Use your hands to spread the oil and salt/pepper all over the cauliflower. Place it in a cast iron skillet or other oven-safe pan; cover with foil, without leaving any gaps. Using cast iron is a great non-toxic choice and also introduces trace amounts of iron into your diet which is perfect.
Bake for 40 to 50 minutes, depending on the size of the cauliflower. Check doneness with a sharp knife, if it slides easily, then it’s done.
Remove foil; broil 5 - 10 minutes in the oven so that it turns golden brown. Keep an eye on it, so it doesn’t burn, especially since cast iron continues to cook a bit even when not in the oven.
Melt 3 T. butter; stir in the parsley; drizzle or brush on the cauliflower while still hot.
Serve sliced, seasoned with extra salt, if necessary.
