It's BBQ and picnic time where good pasta salads are a must. This one is perfect, with bowtie pasta, tomatoes, avocado, red onion and crumbled bacon served with a creamy, delicious dressing.
8 oz. bowtie pasta or other medium-sized pasta
1 c. halved cherry or grape tomatoes
2 avocados, peeled and cubed
8 bacon slices, cooked and crumbled
1/2 c. diced red onion
Creamy Dressing:
1/4 c. mayonnaise
1/2 T. apple cider vinegar
1/2 T. sugar
1/2 t. salt
1/4 t. pepper
Cook bowtie pasta in well salted water according to package directions, 8-15 minutes; drain; rinse with cold water to stop cooking.
While pasta is cooking, fry bacon; drain on paper towels; crumble.
Place pasta, tomatoes, avocado, bacon, and red onion in a large bowl; add mayonnaise, vinegar, sugar, salt and pepper in a small bowl; stir together until smooth.
Pour dressing over pasta salad; toss.
Cover bowl; refrigerate for about 2 hours or more.
Serve.
