Description

Everyone loves tater tots, but need a healthier substitute for them. These are baked, not fried and are made from shredded cauliflower instead of potatoes. These cheesy, crispy tots make an excellent side dish to go with any meal. Serve with your favorite

Ingredients

3 c. or about a half of a head of shredded cauliflower*
4 oz. or about 1 c. shredded sharp Cheddar cheese
1 egg
1/4 c. cornmeal, breadcrumbs or ground oats
1 t. kosher salt
freshly ground black pepper
1/2 t. ground mustard

Preheat oven to 400 degrees. Generously grease a mini-muffin tin with oil or non-stick cooking spray.

Place the shredded cauliflower in a kitchen towel; squeeze out all excess moisture.

Combine all ingredients in a large bowl; mix thoroughly with a fork.

Using a spoon or a scoop, divide the mixture evenly between the muffin cups; press down firmly into the cups.

Bake for 20-25 minutes, or until golden brown. Let cool slightly before running a knife around the edges; pop tots out of the muffin tin.

*A shredding attachment of a food processor or a hand grater can be used.
