These little dessert gems are easy to make and will make everyone extremely happy. They can be made over a real campfire, using a kitchen torch or even over a gas burner.
1 lb. strawberries, 16 - 24 berries, washed and well dried, keeping green tops on*
1 c. marshmallow creme, marshmallow Fluff or homemade marshmallow or meringue
Place the marshmallow cream in a small bowl; warm in the microwave in 5 second increments until easily spreadable but not runny.
Hold each strawberry by its top or push a wooden skewer down through the middle; dip deeply into the marshmallow creme; swirl and flip strawberry at the end to catch any drips.
While still holding the strawberry by its top, carefully toast the marshmallow with a kitchen torch until browned and toasty. You can also do this over a gas stove burner, but remove the grate over the burner first. This method is more difficult to control the amount of heat each marshmallow strawberry received; they got darker more quickly and often lit on fire. If you don't mind a real campfire taste, then this works fine. You could also make these over a real campfire.
Place finished strawberries on a platter.
Serve immediately. They are best eaten within 30 minutes, as the strawberry's moisture will slowly cause the marshmallow to soften and slip off if left too long.
Makes 16-24 strawberries.
*It's important that the strawberries be completely dry, otherwise the marshmallow creme will slip off.
