Do you want to make cookies that are not only delicious, but are soft and chewy as well? Try making these cookies with dry instant pudding. You'll be glad that you did.
2 1/4 c. whole wheat flour (or all-purpose flour)
2 1/4 c. all-purpose flour
2 t. baking soda
1 1/2 c. butter softened
1 1/2 c. light brown sugar packed
1/2 c. white sugar
2 - 3.4 oz packages instant vanilla pudding (dry)
4 eggs, at room temperature
2 t. vanilla extract
4 c. semi-sweet chocolate chips
Preheat oven to 350 degrees. Place silpat mats on cookie sheets.
Whisk together flours and baking soda; set aside.
In a large bowl, cream butter and sugars; add in pudding mix; beat until light and fluffy. Add eggs and vanilla; beat until smooth. Slowly add in the flour mixture, making sure that it is well incorporated. Add chocolate chips; stir well to mix chips throughout dough.
Use a medium scoop to make the cookies an even size.
Bake for 11 minutes. Let cool on the sheet for 5 minutes; remove to wire racks.
