Description
This cream of mushroom soup is extra creamy and delicious from the brie that is added to it. The mushrooms are roasted to bring out more of their flavor. So it is a truly special mushroom soup that is definitely a winner that you will want to serve soon.
Ingredients
- 1 T. oil
- 1 1/2 lb. mushrooms, wiped clean and quartered
- 2 T. butter
- 1 onion, diced
- 2 cloves garlic, chopped
- 1 t. thyme, chopped
- 2 T. flour
- 1/2 c. white wine (or broth/stock)
- 4 c. vegetable or chicken broth/stock
- 4 oz. brie, cut into 1 inch pieces
- 1/2 c. milk or heavy cream
- salt and pepper, to taste
Steps
- Preheat oven to 400 degrees.
- Add oil to a rimmed baking sheet, toss mushrooms in the oil; spread mushrooms in a single layer.
- Roast until mushrooms start to caramelize, about 20-30 minutes, stirring one time after 10-15 minutes.
