A dish that warms the heart!
1 stick plus 1 T. butter
1 onion, chopped or grated, including the juice from grating
2 c. milk
1 lb. Cheddar cheese, or American cheese, shredded
4 cups uncooked elbow macaroni, cooked al dente, drained
1/4 c. bread crumbs, plain
Preheat oven to 350 degrees. Butter a 9x13 inch baking pan.
Melt 1 stick of butter in a saucepan. Add onion and saute about 3-4 minutes. Add the milk slowly and cook until heated through. Add cheese gradually, stirring constantly, until melted and sauce is smooth. Place the cooked macaroni in the buttered baking pan. Pour the cheese mixture on the macaroni and stir to coat it evenly.
Melt the 1 T. butter in a pan over medium heat. Add bread crumbs and saute until lightly browned, about 2 minutes. Sprinkle crumbs over the macaroni and cheese. Bake for 30 minutes or until top is golden brown. Let stand 15 minutes before serving.
