2 egg yolks
2 1/2 T. sugar
1/2 t. vanilla extract
1 c. mascarpone cheese, at room temperature
2/3 c. heavy cream
5-6 ladyfingers
1/4 c. cold-brewed coffee
1 1/4 c. fresh raspberries
cocoa powder, for dusting
In a heatproof bowl, mix egg yolks and sugar together until they become pale yellow.
Set another heatproof bowl over a saucepan of simmering water, making sure that the water doesn't touch the bottom of the bowl. Cook on low heat, stirring and whisking constantly, until mixture thickens and forms a ribbon trail on the surface when a whisk is lifted, about 5-7 minutes. Remove from the heat; let cool a bit.
Whisk in vanilla; beat in mascarpone until smooth.
In a separate bowl, beat heavy cream until stiff peaks form; carefully fold into the mascarpone cheese mixture.
Using a pastry brush, brush tops of each ladyfinger with coffee; cut into 3-4 pieces. Place a layer of ladyfingers in the bottom of 2 serving glasses; add a layer of mascarpone cheese mixture then a layer of raspberries; repeat, ending with a layer of mascarpone cheese mixture.
Dust with cocoa powder; cover. Refrigerate for 1 hour before serving.
