If you have made a flourless cake before and it didn't come out very good, try this recipe. The result is truly amazing. Be sure to use heavy whipping cream and a good quality cocoa powder like the recipe instructs. The result will be a cake that is rich,
Cake:
6 oz. semi-sweet chocolate chips
½ c. salted butter
¾ c. granulated sugar
½ c. unsweetened dutch process cocoa powder
3 large eggs
1 t. vanilla extract
Ganache:
1 c. semi-sweet chocolate chips
½ c. heavy cream
Preheat oven to 375 degrees. Lightly grease a 9 inch cake pan; line the bottom with parchment paper.
Place chocolate chips and butter into a microwavable mixing bowl; microwave for 30 seconds at a time, stirring in between, until everything is melted and smooth.
Pour in sugar, cocoa powder, eggs and vanilla extract; combine everything together using a hand mixer. DO NOT over mix. Scrape the sides and bottom of the bowl to ensure everything is just mixed. Pour into the prepared cake pan. Bake 25 minutes.
Let cool in the pan for 5 minutes; run a knife around edges to loosen; flip cake onto a serving platter or cake stand. Cool completely.
Ganache:
Place chocolate chips into a microwave safe mixing bowl; heat heavy cream in the microwave until simmering, about 45 seconds.
Pour hot cream over chocolate chips; let stand 2 minutes; stir until smooth.
Spread ganache over the top of the cake. Cool before slicing and serving. Garnish with fresh berries, if desired.
Makes one 9 inch cake.
