Juicy summer tomatoes will soon be here and this is recipe is the perfect way to enjoy them. This salad is easy and quick to prepare and makes a great dish to serve your family and can be easily adjusted to feed a crowd.
Dressing:
3 T. red wine vinegar
4 t. extra virgin olive oil
1/2 t. sugar
1/2 t. salt
1/2 t. Dijon mustard
1/4 t. freshly ground black pepper
Salad:
4 large large tomatoes, sliced
1/4 c. fresh basil leaves, tightly packed and shredded (or 1 t. dried basil)
1 red onion, thinly sliced and separated into individual rings
1 c. feta cheese, crumbled
salt and pepper, to taste
Dressing:
In a small bowl or jar, combine all dressing ingredients; whisk or shake together well; set aside.
In a shallow dish or deep plate/platter, arrange tomato slices in a single layer, overlapping just slightly; season with salt and pepper; evenly scatter basil over the tops. Evenly spread onion slices over tomatoes, then basil; sprinkle feta over the top. Drizzle dressing on top.
Let stand at room temperature for at least 15 minutes before serving.
