Use your fresh strawberries to make a quick bread that is moist and delicious. Serve it plain or topped with a strawberry glaze or Cool Whip, if desired.
Bread:
3/4 c. sugar
1/2 c. milk
1/2 c. oil
1 large egg
1 t. vanilla or almond extract
2 c. all-purpose flour
2 t. baking powder
1/4 t. salt
2 c. diced fresh strawberries (or frozen, thawed and drained)
2 T. all-purpose flour
Strawberry Glaze:
2 c. powdered sugar
2 T. melted butter
1/3 c. finely diced strawberries
1/2 t. vanilla or almond extract
1-2 T. heavy cream or milk** optional
Preheat oven to 350 degrees. Grease a 9x5 inch bread pan.
In a medium bowl, stir together sugar, milk, oil, egg and vanilla.
In a separate bowl, combine flour, baking powder and salt.
Add dry ingredients to the wet ingredients; stir until just combined.
In a small bowl, toss together strawberries and the flour, to coat the strawberries. Fold the floured strawberries gently into the batter.
Pour the bread batter into the prepared bread pan. Bake for 50-55 minutes or until a wooden toothpick inserted in the center comes out clean.
Allow bread to cool for 10 minutes; remove it to a wire rack to cool completely.
Strawberry Glaze:
Combine powdered sugar, melted butter, diced strawberries and vanilla extract in a small bowl; mix until smooth.
When bread is cool, spread the glaze on top; slice.
Serve.
