This fruit cooler is a refreshing, tangy beverage that will certainly quench your thirst on a hot, summer day. If you find it a bit too sharp for your personal taste, add a bit of sweetener, of your choice.
2 1/2 c. cloudy apple juice*
3 T. freshly squeezed lemon juice
15 large mint leaves
crushed ice
lemon slices
apple slices
mint leaves
Place the mint leaves, apple and lemon juices into a blender; blitz for several minutes until mint leaves are very finely chopped. Allow juice to settle and any froth to disappear.
Pour into a jar; refrigerate until ready to serve. Serve over ice with lemon or apple slices and fresh mint leaves.
3-4 servings.
*Cloudy apple juice is better for you than clear varieties. The levels of antioxidants which protect against heart disease and cancer are almost double in cloudy apple juice. The antioxidants are also found in red wine, berries and dark chocolate.
