Traditional mimosas are really good, but this strawberry mimosa brings it up a notch. Serve it for special occasions or parties and you will surely impress!
12 oz. frozen raspberries
½ c. frozen strawberries, diced
2 T. sugar, or to taste
1 c. half and half
½ t. vanilla extract
more strawberries for garnish, if desired
1-2 bottles champagne (or 1-2 Liters of soda, Ginger Ale, Sprite or 7 Up)

In a medium saucepan, combine raspberries and diced strawberries; heat over low-medium heat until soft, about 8-10 minutes. Add sugar, to taste. Cook for another 5-7 minutes, stirring frequently. Cool for about 5 minutes.
Blend or puree; strain.
Return to saucepan; add cream and vanilla; stir until combined. Pour into ice cube trays. Freeze for 4-6 hours.
Pour champagne into champagne flutes/glasses, about ½ way full. Add 3-4 ice cubes to each glass.
Garnish with additional strawberries, if desired.
