Ingredients
- Chicken and Broccoli:
- 1 T. olive oil
- 4 skinless, boneless chicken breasts
- salt and freshly ground pepper, to taste
- 8 oz. sliced mushrooms
- 3 c. fresh broccoli florets
- 1 T. freshly squeezed lemon juice
- 4 thinly sliced lemon slices
- Alfredo Sauce:
- 1/2 T. unsalted butter
- 2 cloves garlic, minced
- 1/2 c. low-sodium chicken broth/stock
- 4 T. one third less fat cream cheese or neufchatel cheese
- 1/4 c. grated Parmesan cheese
Steps
- Season chicken with salt and pepper, to taste.
- Heat olive oil in a large non-stick skillet; add chicken to skillet. Add mushrooms; cook over medium-high heat for 4 minutes, turning chicken halfway through. Add broccoli, lemon juice and lemon slices; cover; cook 8 - 10 minutes, or until chicken is done.
