There is no prep work in this dump and bake chicken dish, which makes preparing dinner on a busy weeknight quick and easy. It's a 5 star delicious meal that will be a huge hit with your family!
2 c. shredded cooked chicken (leftover or rotisserie work great)
1 ½ c. shredded Mozzarella or Cheddar cheese, divided
10.5 oz. can condensed cream of chicken soup, NOT diluted (or 2 small cans)
½ c. milk
½ c. sour cream
10 oz. can Rotel tomatoes, drained (or 1 1/4 c. petite-diced tomatoes for a milder option)
½ of a 1 oz. packet (about 4 t.) dry Ranch seasoning mix (just the dry seasoning)
9 3/4 oz. bag Doritos Cool Ranch chips, coarsely crushed (about 4 c. crushed), divided
Preheat oven to 350 degrees. Spray an 11 x 7 inch baking dish with non-stick cooking spray; set aside.
In a large bowl, stir together chicken, 1 c. cheese, soup, milk, sour cream, tomatoes and dry Ranch seasoning.
Place half of the crushed Doritos (about 2 c.) in the bottom of the prepared baking dish; top with chicken mixture.
Bake, uncovered, for about 20-25 minutes or until heated through. Sprinkle top of the casserole with remaining crushed Doritos and remaining shredded cheese. Place dish back in the oven for about 5 minutes or until the cheese has melted.

*To make in advance:
The casserole can be prepared in advance and kept in the refrigerator overnight until ready to bake. Don’t add the top layer of chips and cheese until the final 5 minutes of baking time as instructed above.
