Ingredients
- Meatloaf:
- 1 lb. lean ground beef
- 1 lb. ground pork
- 2 T. canola oil
- 2 stalks celery, diced
- 1 clove garlic, minced
- 1 c. diced onion
- 4 slices bread, torn into chunks
- 1 T. chopped fresh parsley
- 1 T. chopped fresh chives
- 1 T. chopped fresh sage
- 1 T. chopped fresh thyme
- 2 eggs
- 1 t. salt
- 1/2 t. pepper
- 1/4 - 1/3 c. milk
- Garlic Butter Sauce:
- 3/4 c. olive oil
- 8-10 garlic cloves
- 2 c. low-sodium chicken stock
- 1/2 c. water
- 3 T. unsalted butter
- 1 t. chopped fresh parsley
- salt and pepper, to taste
Steps
- Preheat oven to 375 degrees. Line a baking pan with parchment paper.
- Place beef and pork in a large bowl.
- Heat oil in a medium skillet over medium heat; add celery, garlic and onion; cook until soft, 5-7 minutes. Cool slightly; add to the meat in the bowl; add parsley, chives, sage and thyme.
