Ingredients
- 1/2 onion, diced
- 1 lb. ground beef
- 14.5 oz. can Italian diced tomatoes
- 1 1/2 c. frozen mixed veggies, peas and carrots
- 3/4 c. uncooked white rice
- 2 c. beef stock/broth
- 1 t. dried oregano
- 1 t. garlic salt
- 1/2 t. dried basil
- 1/2 t. pepper
- 1 1/2 c. shredded mozzarella cheese
- fresh parsley, if desired
Steps
- Brown ground beef and onion in a large skillet until no longer pink; discard excess fat. Add tomatoes, veggies, rice, stock/broth, oregano, garlic salt, basil and pepper; stir; bring to a light boil; reduce heat to a simmer; cover; cook until rice is tender, about 17 minutes.
- Fluff rice with fork; top with mozzarella cheese. Cover for about 3 minutes to allow cheese to melt.
- Garnish with parsley, if desired. Serve.
