These potatoes are so good, they can be served for special occasions but are so easy to make, you can serve them for weeknight dinners too.
1 T. oil
1 c. Parmigiano-Reggiano or Parmesan cheese, grated
1 T. oil
1 1/2 lb. small (1 - 1 1/2 inch diameter) potatoes, cut in half
salt and pepper, to taste*
Preheat oven to 400 degrees.
Brush oil on the bottom of a baking dish; sprinkle the cheese on the bottom of the dish.
Toss potatoes in 1 T. oil; season with salt and pepper; press into the cheese in the baking dish with the cut sides down.
Roast until the cheese is golden brown and potatoes are tender, about 20-25 minutes; remove from the oven; let cool for 5 minutes, then break potatoes apart.
4 servings.
*The potatoes could also be seasoned with your favorite spices instead of salt and pepper, like garlic powder, a pinch or dried rosemary, Cajun, taco or Italian seasonings.
