There are chocolate chip cookies, and then there are double chocolate chip cookies. These cookies will soon become your go to recipe. They are crunchy on the outside, gooey in the middle and just melt in your mouth.
1 c. salted butter, softened
3/4 c. brown sugar
1/4 c. sugar
3.4 oz. package instant vanilla pudding mix, dry
2 eggs, at room temperature
1 1/2 t. vanilla
2 1/4 c. flour
1 t. baking powder
1 t. baking soda
1 c. milk chocolate chips
1 c. white chocolate chips (or dark chocolate)
Preheat oven to 350 degrees. Line baking sheets with baking mats.
In a large bowl, cream together the butter and sugar; stir in dry pudding mix and vanilla. Beat in 1 egg at a time.
In a separate bowl, mix together flour, baking soda and powder; slowly stir into the wet ingredients; stir in chocolate chips.
Spoon cookie dough onto the baking sheets. Bake cookies for 8-10 minutes, or until edges are set; the centers should be a little underdone. Allow cookies to sit on baking sheets for 2 minutes; remove to a cooling rack.
