Description
Make your guacamole even better by adding bacon and roasted garlic. It puts it so over the top, you won't make guacamole any other way again.
Ingredients
- 1 garlic head
- 1 t. olive oil
- salt and pepper, to taste
- 2 strips center cut bacon, uncooked
- 3 avocados, pitted
- 1/4 c. minced red onion
- 1/4 c. chopped fresh cilantro
- freshly squeezed juice from 1 lime
- 1/4 t. smoked paprika or cayenne pepper
Steps
- Preheat oven to 400 degrees.
- Slice the top off of the garlic head, exposing the cloves; brush with olive oil; sprinkle with salt and pepper; loosely wrap in aluminum foil. Bake 45 minutes.
- Place bacon on a rack with a drip pan underneath the pan; during the garlic's last 10-12 minutes, bake the bacon for 10 -12 minutes in same oven until bacon starts to get crisp. Remove bacon; blot with towels; chop.
